BIG CHEF employs 36 full time and 10 part time associates who represent 16 different nationalities.  

Rosana Calambichis, CEO, BIG CHEF, started the health conscious food company 1999 in Hollywood with 3,500 sq. ft. and has since quadrupled the space to almost 15,000 sq.ft. Initially, they provided appetizers for the foodservice industry in the tri-county area but have expanded their handcrafted product line to include canapes and hors d’oeuvres, freshly prepared grab and go, international entrees, salads, sandwiches, hummus, dips, sushi, dim sum and gourmet desserts that are delivered to local markets seven days a week and shipped to clients nationwide. In addition to serving the hospitality and business community, BIG CHEF caters to both the aviation and marine industry companies.

BIG CHEF is known for item customization, small batch private label and contract manufacturing. The company is USDA & FDA inspected and approved, and is certified at the Platinum level by the Green Business Bureau.

Rosana and COO Mano Calambichis have grown this business into a successful retail/wholesale purveyor with Mano focusing on the food and Rosana on the business. Rosana sits on the board of the Greater Fort Lauderdale Alliance. She is the president of Women in Ecommerce International, is a member of the Women’s Executive Club, the Greater Fort Lauderdale LGBT Chamber and the National Business Aviation Association. The U.S. Department of Commerce has twice recognized BIG CHEF giving them the award for Outstanding Achievements and Contributions to the South Florida Community and Minority Manufacturer of the Year. Most recently, Rosana was recognized by her home country as a Commander by the Sublime Order of Merit of Honor in Rio de Janeiro, Brazil.
